huhu... sedar x sedar dah nak bulan syawal dah... hanya tinggal 12~13 ari lai pose... huhu... dalam nak cuti neh banyak je menda nak kene wat, tugasan pun semakin menimbun~nimbun... projek individu pun aiseh baru 40% siap... kalau dah cuti nanti dah x buka buku la nampaknyer...

ari yang boring tanpa sebarang aktiviti.. so.. call beberapa orang tuk pg jalan~jalan n this is the result :-

Dammm... dah 3 minggu start belajar... duit JPA pun lum masuk lai... aiseh.. banyak menda yang nak kene beli neh... who have some extra~wanna to borrow it... dalam 3 minggu neh x sempat nak balik kg lai... banyak aktiviti yang dijoin... minggu lepas masuk paintball.. lebam2 abis 1 badan.. lebam pun x ilang lai.... tp yang best dapat no. 3.. tembak2 orang.. ehehehe...

Minggu neh lak ada kejohanan futsal utk Software Engineering (sahaja) semua tahun terlibat dari 1~3++... sengit jugak perlawanan yang berlangsung... sampaikan abes luka lutut neh... dammm sape yang tackel dari belakang neh... 

emmm... x ada pun pic aku... coz jd cameraman...(-_*)

akhirnya semester baru telah bermula... bermacam-macam pengalaman dilalui.. nak wat cam mana... pagi neh ngantuk giler.. semalam x cukup tido.. ada je yang baru sampai kene buka pintu(guard katakan),sembang2,sedar2 da subuh.. malam pertama katakan di umah sewa.. banyak barang nak kene kemas n beli untuk mencantikan umah dan susana belajar tuh kene ada tp duit lum masuk lai... dengan keadaan mengantuk n kelas yang sepatutnya  ada tah kemana lak ilangnya tenaga pengajarnya menyebabkan otak da 1/5 masak.. ni ngah menunggu lab lak.. hope x ada.. coz.. nak balik tido..

PENGENALAN

Cheese atau keju antara susu dan hasilan tenusu yang terkenal sejak zaman dahulu sehinggalah zaman moden ini. Selain proses pembuatan dan bentuknya yang unik, makanan ini juga menjadi pilihan para pengguna kerana kepelbagaian perisa yang terdapat di pasaran.

Cheese ini ditambah kedalam pelbagai jenis masakan termasuklah hasilan kek dan roti sebagai penyedap rasa serta memberi kelazatan kepada masakan. Para pengguna boleh memilih pelbagai jenisjenama produk cheese kesukaan mereka. Harga juga berbeza-beza mengikut jenama yang terdapat di pasaran sekarang.

Tetapi sebagai pengguna Islam yang peka dengan isu Halal dan Haram, adakah kita sedar sejauh manakah status memakan produk cheese atau keju ini? Hal demikian kerana produk cheese kini diragui dari segi sumbernya, tambahan pula jika sumber pembuatannya daripada haiwan. Biarpun terdapat sumber pembuatan cheese daripada tumbuhan tetapi terdapat sesetengah pengguna tidak mengetahui produk cheese yang menggunakan enzim rennin.

Isu enzim rennin pula sering dikaitkan dengan isu sumber daripada perut anak lembu atau anak kambing yang tidak disembelih mengikut hukum syara’. Begitu juga isu penggunaan “whey” dalam industri makanan .yang diragui sumbernya . Justeru itu di dalam buletin ringkas ini di jelaskan sedikit sebanyak tentang isu sumber pembuatan cheese, seterusnya status cheese, rennet dan whey dalam industri makanan Halal.


APA ITU CHEESE ?

Cheese merupakan nama generic bagi produk makanan fermented like-based.

Diperbuat daripada susu yang mengandungi ramuan yang dipanggil ‘infaha’ dalam bahasa Arab dan ‘Rennet” dalam bahasa Inggeris.

Merupakan makanan yang memenuhi citarasa penggemar makanan disamping berkhasiat
Dihasilkan dalam pelbagai perisa dan bentuk di seluruh dunia.

Produk asal Negara Eropah & Negara-Negara yang dihuni oleh rakyat Eropah.


CIRI-CIRI & ASPEK NUTRISI CHEESE

Terdapat 6 bentuk asas cheese antaranya bentuk sfera, segi empat, donut, roll dan drum

Warna cheese adalah dalam julat putih ke kuning dan coklat. Warna bergantung kepada tempoh ranum (ripening) iaitu jumlah kehadiran butter fat.

Lebih lama tempoh lebih jumlah kehadiran butter fat,lebih gelap warna cheese.
Dari aspek nutrisi, sebenarnya produk cheese ini mengandungi banyak khasiat dan nilai nutrisinya yang tersendiri.

Antara khasiat yang bakal diperoleh bagi penggemar cheese adalah:

* Cheese mengandungi sumber protein, kalsium, zink, vitamin B12 yang baik.
* Cheese penuh lemak (full fat) adalah sumber utama lemak tepu yang boleh meningkatkan kadar kolestrol.
* Tidak mengandungi karbohidrat atau serat.
* Hanya sedikit kandungan Iron

Satu kajian yang dijalankan menunjukkan bahawa cheddar, Mozzarella, Swiss dan Amerika cheese boleh membantu dalam masalah kerosakan gigi.


JENIS SUSU YANG DIGUNAKAN

Jenis cheese bergantung kepada jenis susu yang digunakan dan proses pembuatan yang terlibat.Jenis susu adalah seperti full fat, semi-skimmed atau fully skimmed-akan dipengaruhi kandungan lemak.Susu daripada haiwan dan baka yang berlainan akan menentukan perisa akhir cheese.Selain daripada susu lembu, cheese boleh diperbuat dari susu kambing dan susu kambing biri-biri.


SUMBER PEMBUATAN CHEESE

Kebiasaannya ejen pembekuan susu itu dibuat dari antara 3 sumber :
1 – Sumber Haiwan.
2 – Sumber tumbuhan.
3 – Sumber produk sintetik (GM).

Selain itu terdapat 3 jenis sumber utama pembuatan cheese.
PEPSIN
Sumber khinzir = HARAM
LIPASE
Sumber khinzir = HARAM
Lembu, tetapi perlu disembelih mengikut hukum Syara’
Mikroorganisma = HALAL

RENNET
Dari perut lembu
Perlu disembelih mengikut hukum syara’

PROSES PEMBUATAN CHEESE

Secara umumnya proses pembuatan cheese bermula dengan proses:

1. Pemanasan susu.
2. Tambahkan agen penggumpalan ( coagulating agent)
3. Susu akan berketul dan cheese terhasil
4. Kultur ditambah bagi memberi rasa dan ciri-ciri yang diingini.

* Pembuatan cheese memerlukan penggunaan enzim bagi menggumpakan susu.
* 3 jenis enzim yang biasa digunakan: Pepsin, Lipase, dan Rennet
Enzim ini adalah daripada sumber haiwan ,tumbuhan atau mikrob.


FATWA MUZAKARAH

Mengikut MUZAKARAH JAWATANKUASA FATWA KALI ke—27 bertarikh 3 Oktober 1990

“ Keju sebagai bahan makanan adalah harus samada enzim yang digunakan sebagai bahan campuran dalam pembuatan keju itu diperolehi daripada tumbuhan atau kulat atau binatang yang halal disembelih”

APA TUGAS KITA ??

Sebagai pengguna Islam, beberapa faktor perlu diambil kira dalam menentukan Halal atau Haramnya Cheese dan Whey. Hal demikian kerana, enzim “rennin” yang digunakan sebagai ejen pembekuan susu perlu dikaji sumbernya terlebih dahulu samada mengikut hukum syara’ atau syubahah. Ejen pembekuan itu sebenarnyalah yang menentukan Halal atau Haram produk cheese atau whey itu.


APAKAH FUNGSI ‘CHYSMOSIN’ ???

* Memecahkan jaringan
* Membenarkan molekul menegang dan membentuk jaringan protein yang panjang dan berserabut
* Lemak dan mineral akan terperangkap dalam jaringan protein ini, lalu terbentuk cheese.
* Chymosin dihasilkan dari tindakbalas bioteknologi.


APA ITU RENNET ???

* Juga dikenali sebagai Rennin/ Chymosin.
* Protein enzim yang digunakan dalam pembuatan cheese.
* Melekatkan susu dan membantu dalam pembentukan tekstur dan perisa cheese.
* Terhasil daripada perut anak lembu atau mikrob, contohnya Bacillus polymyxa, Mucor meihei, Mucor pusillus dan E.parasitica.
* Juga terdapat pada tumbuhan seperti fig trees, paw paw, nenas dan castor oil seeds.
* Bahan aktif dalam rennet adalah chymosin.
* Pembuatan Rennet ini adalah datang dari anak lembu atau kambing yang baru lahir ketika uri-uri masih ada (enzim rennin akan berkurangan bila umurnya meningkat).


APA ITU WHEY ???

Whey terhasil akibat dari proses pembekuan susu dalam pembuatan cheese, di mana enzim yang dipanggil rennin yang terdapat dalam ejen pembekuan susu digunakan untuk memisahkan ketulan susu biasanya dipanggil ‘curd’ (yang akan dikumpul, dibentuk dan diperam untuk dijadikan Cheese) dan cairan yang tinggal yang dipanggil ‘whey’

ADAKAH RENNET HALAL???

Kesahihan rennet bergantung kepada samada terdapat benda hidup dan pengaliran darah dalam sesuatu organ atau tidak.Tiada aliran darah pada rennet, oleh itu rennet bukanlah benda hidup. Ia tidak boleh mati dan oleh kerana itu rennet dibenarkan untuk makan.Sekiranya anak lembu disembelih mengikut hukum syara’ maka rennet tersebut adalah HALAL.

Bagi rennet yang dihasilkan oleh mikrob, media kultur, enzim-enzim lain dan warna yang digunakan mestilah HALAL.Jika gen yang diambil dari haiwan yang HARAM atau haiwan yang HALAL tetapi tidak disembelih mengikut hukum syara’, maka ia adalah HARAM.

Rennet juga dibuat daripada ekstrak bahagian dalam perut lembu atau perut haiwan mamalia lain yang gunanya untuk mencernakan susu ibu yang diminumnya. Pada kebiasaannya, Rennet di ambil dari perut anak lembu atau anak kambing.

“ Malaysia tidak mempunyai pengeluar keju dan JAKIM hanya memberi sijil pengesahan halal kepada produk tempatan. Namun begitu, terdapat banyak keju yang mendapat pengesahan halal dari Badan Islam yang diiktiraf JAKIM. Bagi mengetahui senarai Badan Islam yang diiktiraf JAKIM, Tuan boleh lawati laman web www.halal.gov.my Rennet yang halal juga telah mendapat pengesahan halal dari Badan Islam yang diiktiraf JAKIM. ”

Just wanted to warn you people not to buy those packs of ear buds you get at the roadside. It's made from cotton that has already been used in hospitals.
They take all the dirty, blood and pus filled cotton, wash it, bleach it and use it to make ear buds. So, unless you want to become the first person in the world to get Herpes Zoster Oticus (a viral infection of the inner, middle, and external ear) of the ear and that too from a cotton bud, DON'T BUY THEM!
